We start with Humanely raised and Antibiotic Free Berkshire pork. We trim excess fat, moist cure with extra maple sugar added to neutralize the salt; then smoke them slowly over a burning hickory fire to a beautiful brown. Delicious for lunch or dinner.
All fresh pork is cut and frozen immediately to preserve its freshness. All meat by the cut will be packaged in thick cryovac pouches to extend its freezer life.
